Hirado Seaside Seto Market

Tucked along the waterfront in Hirado, this unassuming market is one of western Kyushu's quiet rewards. A direct-sales hall brings together the island's producers under one roof (fresh fish hauled in from the surrounding strait, seasonal vegetables, rice, local sake, and sweets), while a seaside restaurant turns the same ingredients into meals framed by views of the iconic Hirado Bridge. The signature ingredient to seek out is yaki-ago, the roasted flying-fish stock that anchors much of the region's cooking and makes for a deeply flavoured souvenir.

When to go

The market opens at 8 AM every day of the week, and arriving early rewards you with the freshest fish before shelves thin out. Hirado remains well off the main tourist circuits, so the atmosphere here stays genuinely local throughout the year: a rare thing in Japan's more celebrated food destinations.
