Tokio heeft meer Michelin-sterren dan Parijs. Osaka heeft het beste streetfood ter wereld. Hokkaido doet zeevruchten, ramen en zuivel op piek-kwaliteit. Kyushu doet tonkotsu en shochu. De grote gerecht-families

  • Sushi: Edomae (Tokio) is de globale standaard, maar Osaka’s geperste oshizushi en Kanazawa’s zeevruchten-nigiri zijn andere werelden.
  • Ramen: Tonkotsu (Hakata, varkensbot), Shoyu (Tokio, soja), Miso (Sapporo, gefermenteerde boon), Shio (Hakodate, zout). Elke regio verdedigt zijn eigen.
  • Tempura: Edo-stijl (Tokio) is de canonieke versie; de beste balies kosten ¥10.000–25.000 lunch maar zijn een ervaring een keer waard.
  • Yakitori: kip op houtskool, elke wijk heeft een balie.
  • Okonomiyaki: Osaka-stijl (gemixt) en Hiroshima-stijl (gelaagd met noedels) zijn totaal verschillende gerechten ondanks dezelfde naam.
  • Izakaya: Japans pub-restaurant, kleine gerechten, bier/sake, de dinsdagavond-default.
  • Kaiseki: multi-course haute cuisine; ryokan-diners zijn de makkelijkste entree, ¥15.000+ per persoon.
  • Conbini-eten: ja, de conbini onigiri/oden/sandwiches zijn echt goed. Family Mart voor gebakken kip, 7-Eleven voor sandwiches, Lawson voor desserts.

  • Tokio: Tsukiji Outer Market (sushi, ontbijt), Omoide Yokocho (yakitori), depachika bij Isetan Shinjuku (alles, late kortingen).
  • Osaka: Dotonbori (streetfood), Shinsekai (kushikatsu), Kuromon Ichiba markt.
  • Kyoto: Nishiki Markt (food crawl), Pontocho-steeg (intiem diner), Gion (kaiseki).
  • Hiroshima: Okonomimura (okonomiyaki), Kanawa (oesters nov–feb).
